Chicken Skewers

Campfire skewers are a flavorful and simple dish that can be enjoyed while camping. Here’s a recipe for campfire chicken skewers:

Ingredients:
  • Boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • Bell peppers, cut into chunks
  • Red onions, cut into chunks
  • Cherry tomatoes
  • Olive oil
  • Lemon juice
  • Garlic, minced
  • Salt and pepper to taste
  • Wooden or metal skewers
Instructions:
  1. Prepare the campfire: Build a fire and let it burn down to hot coals. You’ll need a good bed of hot coals for cooking the chicken skewers.
  2. Soak wooden skewers (if using): If you’re using wooden skewers, soak them in water for about 30 minutes before assembling the skewers. This will prevent them from burning on the campfire.
  3. Prepare the marinade: In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Mix well to create the marinade.
  4. Marinate the chicken: Place the pieces in the marinade and toss to coat them evenly. Let the chicken marinate for at least 30 minutes, or up to overnight in a cooler or refrigerator if you have the means to keep it chilled.
  5. Assemble the skewers: Thread the marinated chicken pieces onto the skewers, alternating with chunks of bell peppers, red onions, and cherry tomatoes. Repeat until all the ingredients are used, leaving some space between the pieces for even cooking.
  6. Cook the skewers: Place the skewers directly on the hot coals of the campfire. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender. Keep an eye on the skewers to prevent them from burning. The cooking time may vary depending on the heat of the coals.
  7. Serve and enjoy: Once the chicken is cooked, carefully remove the skewers from the fire using oven mitts or heat-resistant gloves. Let them cool for a few minutes before serving. Serve the campfire chicken skewers as a delicious and protein-packed camping meal. They pair well with rice, salad, or flatbread.
Final Thoughts

Note: If you don’t have access to skewers, you can also cook the marinated chicken and vegetables in a cast-iron skillet or grill grate over the campfire. Just make sure to turn the pieces for even cooking.
